  • First, prepare the quinoa with water according to the pack instructions. In most cases, simmer the quinoa for about 15 minutes.
  • Dice the cucumber, tomato, and prep the avocado by removing the pit and chopping it into bite-sized pieces.
  • When the quinoa good to go, toss it together with the cucumber, tomato, creamy avocado, and sweet corn.
  • Squeeze that lemon for its citrusy goodness, drizzle olive oil over your creation, and top it all off with a sprinkle of fresh parsley. Season to perfection with a pinch of salt and a dash of pepper.
